Ingredients

- 2 ripe bananas, mashed
- 1/3 cup melted coconut oil

- 1 1/2 cups all-purpose flour (or gluten-free flour blend)
- 1 teaspoon baking soda

Recipe

1. Preheat your wood-fired oven to around 350°F (175°C). Grease a loaf pan and set aside.
2. In a large mixing bowl, combine the mashed bananas, melted coconut oil, coconut sugar, almond milk, and vanilla extract. Mix until well combined.
3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
5. If desired, fold in any optional mix-ins such as chopped nuts, chocolate chips, or dried fruit.
6. Pour the batter into the prepared loaf pan and spread it out evenly.
7. Place the loaf pan in the preheated wood-fired oven and bake for about 45-55 minutes, or until a toothpick inserted into the centre comes out clean.
8. Once baked, remove the banana bread from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
