Recipe

1. Preheat your wood-fired oven to around 375°F (190°C).

2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

3. In a separate bowl, combine the milk and vinegar, and let it sit for a few minutes to create buttermilk.

4. Add the egg, melted butter, and vanilla extract to the buttermilk mixture, and whisk until well combined.

5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

6. Lightly grease a cast iron skillet or griddle with butter or oil.

7. Pour about 1/4 cup of batter onto the skillet for each pancake.
