Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes (adjust to taste)
- 1 can (14 oz) diced tomatoes
- Salt and pepper, to taste
- 4-6 large eggs
- Fresh parsley, chopped, for garnish
- Crumbled feta cheese (optional), for serving
- Warm crusty bread or pita, for serving

Recipe

1. Preheat your wood-fired oven to around 375°F (190°C).
2. In a large cast iron skillet or ovenproof pan, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
3. Add minced garlic, diced bell peppers, ground cumin, smoked paprika, and chili flakes. Cook for another 5 minutes, until peppers are tender and fragrant.
4. Pour in the canned diced tomatoes and season with salt and pepper to taste. Simmer the mixture for 10-15 minutes, allowing the flavours to meld together and the sauce to thicken slightly.
5. Using a spoon, create small wells in the tomato sauce and crack the eggs into the wells. Season the eggs with a sprinkle of salt and pepper.
6. Transfer the skillet to the preheated wood-fired oven and bake for 8-10 minutes, or until the egg whites are set but the yolks are still runny.
7. Once cooked, remove the skillet from the oven and garnish with chopped fresh parsley and crumbled feta cheese, if desired.
