Recipe

  1. In a mixing bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  1. In a large mixing bowl, whisk together the flour and salt. Make a well in the centre and pour in the yeast mixture. Stir until a dough forms.
  1. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
  1. Preheat your wood-fired oven to about 800°F (425°C), ensuring the flames have died down and the oven floor is evenly heated.
  1. Punch down the risen dough and divide it into two equal portions. On a floured surface, roll out each portion into a round circle, about 10-12 inches in diameter, for individual-sized pizzas.
  1. Transfer the rolled-out dough to a pizza peel dusted with cornmeal or flour to prevent sticking.
  1. Spread a thin layer of tomato sauce over the dough, leaving a small border around the edges. Arrange slices of fresh mozzarella cheese evenly over the sauce.
  1. Tear fresh basil leaves and scatter them over the cheese. Season with salt and freshly ground black pepper to taste.
  1. Carefully slide the prepared pizza onto the preheated pizza stone or directly onto the oven floor using the pizza peel.
