Ingredients

For the Chicken Katsu

- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour

- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 tablespoon garam masala

- 2 cups vegetable or chicken broth
- 2 tablespoons soy sauce (gluten-free if needed)
- 1 tablespoon honey or brown sugar

Recipe

1. Preheat your wood-fired oven to around 400°F (200°C).
2. Prepare the chicken breasts by pounding them to an even thickness, about ½ inch thick. Season with salt and pepper.
3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
4. Dredge each chicken breast in the flour, shaking off any excess. Dip into the beaten eggs, then coat with panko breadcrumbs, pressing gently to adhere.
5. Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook until golden brown and cooked through, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
6. In a separate skillet or saucepan, heat vegetable oil over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic, curry powder, garam masala, and tomato paste, and cook for another 2 minutes until fragrant.
7. Pour in the vegetable or chicken broth, soy sauce, and honey or brown sugar. Bring the mixture to a simmer and let it cook for about 10-15 minutes until the sauce thickens slightly. Season with salt and pepper to taste.
8. Serve the crispy chicken katsu over cooked rice, generously drizzled with the curry sauce. Garnish with sliced green onions and serve with pickled ginger on the side if desired.
