Halloween Wood Fired Fajita Stuffed Peppers

This spooky treat will help keep the kids away from the sweets this Halloween. A perfect dish for getting the little ones involved and learning how to cook!

  1. Slice off the top of the peppers, be sure to keep the tops. Remove the seeds and any white flesh from inside.
  2. Using a small knife, carve a spooky face into the peppers.
  3. Chop up a small onion and gently fry until soft then add 1 crushed garlic clove and gently fry for two minutes.
  4. Add your mince beef and cook until browned before adding your chosen fajita spice mix. Stir in and then set the pan aside.
  5. Fill each pepper with the fajita mix and top with cheese. Replace the pepper lids using skewers or cocktail sticks to help secure them in place.
  6. Add to a metal tray, cover with foil and place in your wood fired oven at 200 °C and bake for 30 minutes. Remove the foil and bake for a further 10 minutes before removing.

TIP: Use your leftovers to fill the peppers. Chilli works very well and helps add that extra kick.
